The grapes are quickly transferred from the vine to the winery where they undergo a short maceration and a light pressing to enable a limited extraction of colour and to maintain a crystal-clear hue.
The juice is fermented at low temperature for a fortnight, and a few successive rackings help to get rid of the particles in suspension that have settled at the bottom of the tank.
The bottling occurs in Spring, just after a single filtration in order to keep the aroma intensity.
